Granola
- 6 cup oats
- 2 cup nuts
- 1 tsp salt
- 2 tsp cinnamon
- 2 tsp ginger
- 2 tsp nutmeg
- 1/2 cup oil (less if using egg white)
- 1 cup honey
325 degrees for 30-45 minutes. Stir at 20 minutes. Let cool.
Vegan Nachos
- 2 cups raw cashews
- 4 cups water (divided)
- 1/2 cup nutritional yeast
- 3 tbsp lemon juice
- 2 tsp salt, or to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- 2 tsp Sriracha
- 1/2 tsp turmeric (for color)
Blend.
Protein Balls
- 1 cup almonds
- 1/2 cup oats
- 30-ish dates
- 3 tbsp peanut butter
- 2 tbsp coconut oil
Blend. Form into balls.
Lemon Syrup
- 4 whole lemons (and zest)
- 1.25 cup water
- 1 cup sugar
- Splash vanilla extract
Simmer 15 minutes. 2-3 tablespoons per 8 ounces of seltzer.
Hummus
- 1 can chickpeas (15 oz)
- 1/2 cup chickpea juice or water
- 1/3 cup tahini
- 1 lemon zested
- 2 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 2 cloves roasted garlic
10 minute simmer of chickpeas with 1 teaspoon of baking soda. “Roast” garlic in microwave at 40% power, 5 minutes. Rinse chickpeas and blend everything.
Pour-over Coffee
- Rinse filter
- +30 grams coffee
- +60 grams water, wait 30 seconds
- +150 grams wait 60 seconds
- +250 grams wait 30 seconds
Pizza Dough
- 425 grams bread flour
- 350 grams water
- 8 grams salt
- 120 grams sour dough starter
Mix water and flour together, let sit for 10 minutes before adding sourdough starter and salt. Mix for 10 minutes and kneed into a ball. Place in a large bowl coated in olive oil. Let set for 8 hours. Form into ~250 gram balls. Let sit for a couple hours before using or put in fridge.
Vegan Mozzarella
- 1/2 cup raw cashews (soaked)
- 1 1/3 cups water
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1/2 tsp salt
- 4 tbsp tapioca starch
Boil enough water to soak the cashews for 5 minutes (or an hour). Drain cashews and put in blender along with water (not water used for soaking) and other ingredients. Blend and pour watery mixture into a saucepan, bring heat to medium. Stir with spatula until it gets clumpy and then super gooey and stretchy. When it’s one big mass remove from heat ASAP.
